I choose healthy…most of the time.

Choosing to eat healthy is just that…a CHOICE.  Then the real challenge begins; overhauling your pantry and re-learning (or learning for the first time) how to cook from scratch.  Every time I do this the results are so pleasing to the palate, so why do I struggle?  If I really think about it, I need to be a better planner.  Yep good old time management and thinking ahead makes this healthy lifestyle a bit more simple.  As I look back on the past two years, the items I make on a regular basis used to stump me but now are second nature.  It is the planning of dinner that gets me most often….as a self proclaimed “Home Management Expert” my duties are to keep house, laundry, food, pets, and most of all our children in order.  By the end of my day I am spent and the thought of creating a tantalizing meal sends me running for the carry-out brochures.  If only I had been prepared!  Thankfully this doesn’t happen as often as it has in the past, so we are making progress. Yay me! But when I do plan ahead I feel more accomplished and the household runs like a fine tuned motor.  So if you are like me and struggle sometimes, pick yourself up and start again….at least we are heading in the right direction.  Happy eating!!!
